Manicotti Formaggio

Marinate Your Meat
You will need 1/4 lb of chicken strips or shrimp which has been peel and devained.

Cover the meat with Italian Salad dressing and refrigerate for at least 30 minutes.

Make The Manicotti

1 egg, lightly beaten
1 3/4 cups Ricotta Cheese
1 1/2 cups shredded Mozzarella cheese
1/2 cup grated parmesan cheese
12 manicotti shells, cooked and rinsed in cold water

Spoon cheese mixture into a large ziploc bag. Snip off a small bit of of one of the bottom corners of the bag.

Fill manicotti shells by squeezing the cheese mixture into both sides of each shell.

NOTE: You can always substitute frozen manicotti. Cook according to package directions and then just drop into the sauce. In a hurry, just use spaghetti or linquine

Make the Shrimp Carbonara Sauce
Carbonara is an Italian dish based on parmesan cheese, eggs and cured fatty pork. Pancetta is used but bacon can be substitued. Cream is sometimes added in some carbonara recipes.

The Olive Garden Recipe also calls for shrimp, roma tomatoes, and scallions.


1 cup of butter

1 1/2 teaspoon chopped garlic

3 tablespoons flour

1 cup grated Parmesan cheese

4 cups heavy cream

4 cups milk

6 Roma tomatoes, diced

6 slices of bacon, cut into small pieces

small bunch of scallions

1. Melt butter in a large sauce pan over medium heat. Add garlic and bacon and shrimp. Saute for 5 minutes. Remove Shrimp.

2. Add flour, parmesan cheese heavy cream and milk. Use a wire whisk to whip all ingredients together. Bring to a boil. Reduce heat and allow to simmer. Add manicotti to pan to heat the cheeses. Serve with shrimp and chopped scallions.

Make the Chicken and Spinach Cream Sauce
The process is the same as the above recipe. Just leave out the bacon completely and substitute spinach for the tomatoes and use roasted red peppers instead of scallions.
