Seafood Portofino

Ingredients for Portofino Sauce
1/2 cup butter
1/2 cup yellow onion, diced
1/2 cup roux
2 cups milk
1 pint heavy cream
1/4 cup shrimp stock
2 cups white cooking wine
1-1/2 oz garlic puree
Makes 1/2 gallon of sauce.

Seafood Portofino Ingredients
2 Tbsp olive oil
1/4 cup mushrooms
1/2 cup portofino sauce
1/2 cup shrimp
1/4 cup crawfish
1/4 cup scallops
6 mussels
cooked linguine pasta
Directions
Heat oil in sauted pan over medium heat.
Add mushrooms.  Cook 30 seconds.
Add seafood and cook 30 seconds.
Add portofino sauce.
Cook until bubbling throughout.
Add cooked linguine and toss in the sauce to coat pasta.
Mussels should be open when finished.
