Chicken with Lemon Sage Sauce

Ingredients Olive Garden Chicken with Lemon Sage Sauce


Chicken

  • 4 (6oz) chicken breasts, boneless skinless, and split in half
  • 2 cups of flour seasoned with salt and pepper
  • 1/2 cup of olive oil

Piccatta Batter

  • 6 eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup grated Romano cheese
  • 2 Tbsp parsley
  • 2 Tbsp basil

Lemon Sage Sauce

  • 1/4 cup finely chopped shallots
  • 1 Tbsp chopped garlic
  • 2 Tbsp finely chopped fresh sage
  • 2 Tbsp chopped parsley
  • 1/4 cup lemon juice
  • 1 Tbsp lemon zest
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 6 Tbsp unsalted butter
  • salt and pepper to taste

Directions Olive Garden Chicken with Lemon Sage Sauce

To make the Piccatta Batter

  1. Combine eggs, cheeses, parsley and basil together in a large mixing bowl.

To make the Chicken Breast

  1. Pound the chicken breast until one fourth inch thick.
  2. Dip chicken in the flour mixture and dip it into the piccata batter.
  3. Coat evenly on both sides.
  4. Heat olive oil in a large skillet on medium heat.
  5. Place chicken in a skillet and fry until the edges are brown on each side.
  6. Transfer chicken from the skillet into a baking pan.
  7. Bake in a 350 degree oven fro 5-6 minutes.

To make the sauce

  1. Drain 3/4 of the oil from the skillet.
  2. Add the shallots, garlic and herbs.
  3. Saute over medium heat until the shallots are transparent.
  4. Add lemon juice, lemon zest, white wine and reduce liquid by 1/2.
  5. Add heavy cream and simmer until the sauce has thickened slightly.
  6. Remove pan from heat and whip in the butter.
  7. Season to taste with salt and pepper.
To serve pour 1/4 cup of sauce on a plate and place the chicken on top.
This recipe makes 4 servings.
