Grilled Chicken Crostada

The goal here is to make this Olive Garden dish at home with grocery items available at my local Walmart Supercenter.

Grilled chicken breasts with campanelle pasta tossed in a pancetta bacon and sun-dried tomato alfredo sauce, served with baked asiago cheese crostada.


Making the Crostada

A crostada/crostata is basically an italian pie. So I found the pie dough mix pictured to the right and added grated asiago cheese. I rolled out the dough and placed in on a pizza pan and baked according to the directions on the box.

If you cannot find asiago cheese you can always subsitute with an Italian cheese blend.

Making the Sauce

The Classico brand pictured to the right is very good. I use it all the time.
Just cut your bacon into bite size pieces and fry in a skillet until done. Drain and
add the sauce from the jar to heat.

You can substitute regular bacon for the pancetta. Do not use the hickory or maple flavor.

I couldn't find the campanelle pasta at Walmart so I substituted the bow ties which are similiar to the shape and size of the campanelle pasta.  Cook according to directions on the box.

I marinated the chicken breasts in Italian salad dressing and cooked on my George Foreman Grill.
