Smoked Mozzarella Chicken and Penne Pasta

Chicken and Marinade Ingredients
  • 1 1/2 lbs. chicken tenders
  • 3 Tbs. lemon juice
  • 1 garlic clove, crushed
  • 2-3 Tbs. olive oil for cooking chicken
Pasta Ingredients
  • 3 Tbs. butter
  • 1 clove garlic, crushed
  • 1 red bell pepper, chopped
  • 1/2 cup white wine
  • 1 1/2 cups half & half, warmed
  • 3/4 cup grated Parmesan
  • 3/4 cup grated Asiago cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 3-4 slices smoked provolone, cut in thin strips or 1/2 cup shredded Smoked Mozzarella
  • salt and pepper to taste
  • flat leaf parsley, chopped for garnish
{Step 1} Marinate the chicken in lemon juice and garlic for an hour in the fridge.
{Step 2} Heat water for pasta and cook pasta. While it cooks, do remaining steps of recipe.
{Step 3} Heat 2-3 Tbs. olive oil in a large skillet. Add chicken and cook till done. Remove from pan.
{Step 4} Add 3 Tbs. butter to same skillet. Cook garlic in butter 2-3 minutes. Add chopped red pepper. Cook several minutes till pepper is tender-crisp. Remove from pan.
{Step 5} Whisk in wine, cooking a minute. Whisk in half & half.
{Step 6} Stir in Parmesan and Asiago cheese. Turn heat down to simmer, stirring to let the cheese melt.
{Step 7} Drain cooked pasta. Combine pasta with sauce and red peppers. Top with cooked chicken, sun-dried tomatoes, Provolone or Smoked Mozzarella and parsley.

Olive Garden puts a light breading on the chicken....any suggestion on how to accomplish this?

Have you tried covering the chicken with bread crumbs?

Use chicken that is already breaded, once soaked it will have the same effect as a light breading as it will be to we to crisp up again.

A perfect breading to chicken is 3 parts flower, 1 part parmeson cheese, salt and pepper. Cook on medium high in a skillet with a tablespoon or more of extra virgin olive oil. 3-4 minutes or until golden brown on each side. Remember to not over crowd the pan so the chicken has room to fully cook. May need to fry in batches. And don't forgot to tenderize!

I just finished making this for the first time, while the taste was pretty close it seemed kinda runny & the cheese seemed like it didn't melt smoothly. Any tips on making this creamier? Didn't seem to coat the pasta very well.
