Pork Filettino

Olive Garden Recipe

Serves 4

4 small pork tenderloins
4 garlic cloves
2 tablespoons fresh rosemary, chopped
1 tablespoons sage, chopped
6 tablespoons extra virgin olive oil
salt to taste
pepper to taste
4 medium russet potatoes, cut into 1” pieces

Preheat oven to 375 degrees.Season pork with garlic, rosemary, sage, extra virgin olive oil, salt and pepper. Allow to sit in marinade for 30 minutes. Place potatoes on sheet tray and roast for approximately 30 minutes, or until fork tender. Grill marinated pork approximately 4-5 minutes on each side, scoring with diamond-shaped marks. Cut into slices. Serve pork garnished with roasted potatoes.
