Breadstick Grilled Cheese


Breadstick Grilled Cheese with Tuscan Tomato Soup
Olive Garden Recipe

Serves 6-8

Soup:
64 ounces tomato sauce
1 breadstick
1 cup diced fresh tomatoes
1 cup heavy cream
1/2 cup extra virgin olive oil
1/4 cup chopped basil
1 teaspoon salt
1/2 teaspoon pepper

Dice breadstick into 1/2 inch sized pieces. Add tomato sauce, diced tomatoes, diced breadsticks, heavy cream, extra virgin olive oil, basil, salt and pepper in a pot and bring to boil. Reduce heat and simmer for 5 minutes. Using an immersion blender, blend soup until smooth.

Breadstick Grilled Cheese:
8 breadsticks
4 tablespoons melted butter
8 slices of your favorite cheese

Cut bread sticks in half, lengthwise. Place cheese slices between breadsticks, cut sides facing out
Melt butter on medium heat in a large skillet or griddle. Place sandwiches on griddle for 1 to 2 minutes until golden brown, flip and repeat. Cheese should be fully melted.
